A quick wild game cooking video tutorial showing the steps to prepare a delicious sesame wild duck dish. Just after a successful duck hunt, Chad Belding shows us how to properly process the wild duck he just harvested. Once cut, cleaned and dried he seasons the meat with Provider Fowl Rub. Next he puts the seasoned duck breasts in the Traeger set to 250 degrees. While the meat cooks, he sautés some onion and garlic with black pepper and butter. Remove the duck when it reaches an internal temp of 115, then add to a very hot cast iron skillet with Napa Valley Olive Oil, use a press and cook for 30 seconds to 1 min on each side so the meat is about 125 degrees internal temperature. Slice the duck and add to your caramelized onions and garlic. Next add your sesame oil, worcestershire sauce and Teriyaki sauce cook for just a bit careful to not over cook your duck. Remove and add your green onions and sesame and serve!
